Ingredients:
- 2 cans black beans, rinsed and drained - 2 cups fire-roasted corn - 1 red bell pepper, diced - 1/2 red onion, finely diced - 1/2 cup chopped cilantro - Juice of 2 limes - 2 tsp cumin - 1 tsp smoked paprika - Salt & pepper to taste - Olive oil (splash)
Instructions:
1. In a large bowl, mix beans, corn, bell pepper, onion, and cilantro. 2. Whisk lime juice, olive oil, cumin, paprika, salt, and pepper in a small bowl. 3. Pour dressing over salad and toss well. 4. Chill and serve in 2 oz cups or cucumber boats.
Ingredients:
- 1 medium seedless watermelon, cut in slabs - Juice & zest of 2 limes - 1/2 cup fresh chopped mint - Optional: balsamic glaze or Tajin
Instructions:
1. Grill watermelon slabs 1-2 min per side until marked. 2. Let cool, then cube the grilled watermelon. 3. Toss with lime juice, zest, and mint. 4. Serve chilled in sample cups or skewers.
